iPhone iOS update to any version but latest?

Hello everyone, i am in need of help, i have a jailbroken phone running ios 10, now i unjailbroke it and i wanna update the IOS to 11 or anything around that, (because a few games i wanna back require ios 11) but it will only let me update straight to ios 15.6, is there a way to update my ios but not all the way to the newest version?
