Carrier needs to update my iPhone for warranty repair: Anyway to revert back?

I am currently using a jailbroken XS Max on 14.3. My display needs to be replaced (dead pixel issue) but my phone carrier will not do it unless I allow them to update the phones firmware first. I have tried using a story that I have work required apps that are not compatible with iOS 15 but to no avail, the only way to get screen replaced through warranty is if I let them update to latest iOS. So my question is: Do I have any options to revert back to iOS 14.3 if I allow them to update my iPhone? I don't have blobs saved and AFAIK you can't save them after the signing period is over? BTW the jailbroken phone is still in my possession, I haven't given it to them yet. I have found through googling that there exist tweaks/methods like system info and Déverser but have no experience with them. Anyone have any suggestions?
